Carrot Lox SERVES 4 PREP › COOK 45 MINS INGREDIENTS 1/3 cup dill leaves, plus extra to serve 4 medium carrots 1 small red onion 4 wholegrain bagels ½ cup spreadable cream cheese STAPLES ½ cup white-wine vinegar 1 tbsp sea salt flakes 1 tbsp caster sugar METHOD 1 Place vinegar, salt flakes, sugar and ¼ cup (60ml) water in a small saucepan over high heat; cook for 2 minutes, stirring occasionally, or until salt and sugar dissolve and mixture is warm.
