Overnight ‘Carrot Cake’ Oats

500ml Unsweetened soya milk, plus more for thinning370g Greek yoghurt3 tsp Pure maple syrup2 tsp Ground cinnamon1½ tsp Pure vanilla essence100g Rolled oats275g Carrot, coarsely grated75g Pecans, toasted and chopped, plus more for topping75g Raisins, chopped, plus more for topping15g Toasted unsweetened coconut chips, lightly crushed, plus more for topping50g Chia seeds
1| In a large bowl, whisk together the soya milk, yoghurt, maple syrup, cinnamon, vanilla extract and ½ tsp salt.
2| Stir in the oats, carrot, pecans, raisins, coconut chips and chia seeds until well combined. Divide among 4 jars, cover and refrigerate them overnight.
3| Serve, adjusting the consistency with extra soya milk as needed. Top with additional pecans, raisins and coconut chips.
