1. BREAD FLOUR OR BUST. Using a good bread flour in your recipe is a must. Strong flour with a high protein level (11% to 13% protein) helps you create that key starchy chewiness. King Arthur Bread Flour, with a 12.7% protein content, is a good choice. 2. DOUGH SHOULD BE STIFF BUT NOT STICKY. Through the centuries, England has been the birthplace of many tasty tarts, from the timeless treacle and Yorkshire curd to the lesser-known Manchester or maids of honour. Out of them all, the Bakewell tart has transcended to become one of England’s most beloved confections. In a 2015 survey conducted by Craft Bakers’ Week, Brits chose the Bakewell tart as the country’s best dessert over Eccles cake and Chelsea buns by more than a quarter of the votes. I’m very particular when it comes to them and love to explore all the different styles, squidgy inside with a crunchy outside, layered flavours, milk or dark chocolate, cocoa powder or chocolate, and just-baked so they are gooey from inside to out.
