LISBON REMAINS, FOR ME, one of the great underrated European capital cities. I love its colourful buildings and black-and-white calçada-tiled streets, its grand public plazas and intimate twisting lanes. I love its varied neighbourhoods, stacked one on top of the other, reached by vertiginous stairs, funiculars and old-time trams – a fantastic walking, climbing, getting-lost-in city. There’s an openness and liveable calm that permeates the city, welcomes the visitor and just feels different to most places. And, of course, I love all the good things to taste here – the tinned fish and fresh seafood, the wine and many stews and particular dining habits, a culture that prizes and delights in its pastries, the connection between old Portuguese tradition and the influence of ingredients, spices and dishes arriving from…
