Turkey Mint Burgers
Serves 4, Prep and Cook: 35 mins
2 tblsps olive oil 2 large onions, halved, thinly sliced 500g turkey mince 2 tsps dry mustard powder 2 tblsps mango chutney 4 green spring onions, finely chopped 1 egg, lightly beaten ¹/ ³ cup polenta ¼ cup thinly sliced fresh mint leaves 200g tub cottage cheese 4 wholemeal burger buns, halved, toasted 80g mixed salad leaves 1 Heat 1 tblsp of the oil in a large, non-stick frying pan over a medium heat. Cook onions, stirring occasionally, for about 10 minutes, or until soft. Remove. Cover to keep warm.
