Sweet potato & zucchini fritters SERVES 4 (MAKES 10) PREP 20 MINS COOK 15 MINS 350g sweet potato, peeled, grated 1 zucchini, grated 2 eggs ½ small red onion, finely sliced ¼ cup plain flour ¼ cup parmesan, grated 1 tbsp basil, finely chopped ½ cup light spreadable cream cheese 1 tomato, seeded, chopped 50g rocket lettuce 1 Squeeze excess moisture from grated sweet potato and zucchini. Transfer to a large bowl with eggs, onion, flour, parmesan and basil. Mix well and season to taste. 2 Lightly spray a large frying pan with olive oil. Heat on medium. Classic chocolate lamingtons MAKES 15 PREP 25 MINS (PLUS COOLING) COOK 35 MINS 125g butter, chopped, softened ¾ cup caster sugar 2 eggs 1 tsp vanilla extract  2 cups self-raising flour sifted  ½ cup milk  2 cups desiccated coconut Strawberry jam, whipped cream ICING  4 cups icing-sugar mixture  ½ cup cocoa powder  2⁄3 cup milk  20g butter, melted 1 Preheat oven to 180°C.  Lightly grease and line an  18 x 28cm lamington pan.  2 In a large bowl, using an electric mixer, beat butter and sugar together until creamy.
