Italian tomato meatball & macaroni soup SERVES 4 PREP 5 MINS COOK 15 MINS 1 litre chicken or vegetable stock 420g can tomato soup ¾ cup macaroni 2 tbsp olive oil Shaved parmesan, fresh herbs, crusty bread, to serve MEATBALLS 250g beef mince 2 green onions, finely chopped ¼ cup finely grated parmesan ¼ cup breadcrumbs 1 In a large saucepan, bring stock and soup to boil on high.
