MINI TREND: Kintsugi Trends are often inspired by cultures from around the world, and kintsugi is the latest craze filling our Instagram feeds. But what you may not know is that its roots stem from a long-standing lineage of Japanese culture dating back to the 15th century. Cucumber As versatile as they come, cucumber’s refreshing flavour lends itself to salads, soups and summery desserts For a fresh prawn and cucumber salad, mix together 2 tbsp avocado oil, 1 tbsp chopped dill and juice of 1 lemon. Toss 300g cooked, peeled king prawns in the dressing. Marinate for 10 minutes. Remove the prawns and toss 150g spinach in the dressing. Add in 2 sliced avocados and 1 chopped cucumber. Toss to combine. Top with the prawns and chopped cashews. For a chilled pea and cucumber soup, put 400g peas and 1 chopped cucumber into a pan with a splash of water. Cook for 2 minutes.
