16 raw tiger or king prawns, shelledJuice and zest of 2 limes1 clove garlic, peeled and crushed1 red chilli, deseeded and finely chopped6alt and freshly ground black pepper2 tbsps olive oil1 tbsp light soy sauce
For the sweet chilli mayo
4 tbsps mayonnaise1 tbsp sweet chilli sauce
For the herby couscous
250g couscous (wholemeal if poss)1 tsp salt2 large handfuls fresh herbs (a comboof coriander, mint, flat-leaf parsleyworks well), roughly chopped1 red pepper, deseeded and chopped1 tsp ground cumin2 tbsps extra virgin olive oil1 tbsp fresh lemon juice (or to taste)wedges of lemon or lime to serve
