They may be ugly, thick-skinned and knobbly, but root vegetables are, in my opinion, things of great beauty! Not only amazing for your health, they’re generally very cheap and incredibly delicious. Growing underground, root vegetables absorb nutrients from the soil and, as such, are packed with antioxidants, vitamins C, B and A, and iron. Excellent sources of slow-releasing carbohydrate and fibre, they’re filling and satisfying too; hence a good choice for triathletes. First up, one of my all-time favourites of the root veg family: sweet potatoes.
