Chillied cheese
Mix 1 bunch spring onions, finely sliced, 100g cherry tomatoes, quartered, 100g Gruyère, grated and 1 tbsp dried chilli flakes in a bowl, then scoop onto toast. Shake over a little Worcestershire sauce and grill until golden and melted. Serves 2
Scrambled omelette
Beat together 2 eggs, 1 tbsp crème fraîche, 25g grated cheddar and a small bunch of chives, snipped, with a little seasoning. Heat 1 tsp oil in a pan, then soften 1 sliced spring onion for a few minutes. Add 3 halved cherry tomatoes and warm through, then pour in egg mixture. Cook over a low heat, stirring, until eggs are just set. Pile on top of toast. Serves 1
