Chorizo hash with poached egg
■ Serves 2 ■ Prep 10 ■ Cook 25 mins
300g new potatoes, quartered 2 tbsp olive oil 40g chorizo, cut into strips 1 red chilli, finely chopped ½ small bunch of parsley, chopped 2 eggs, poached 1 Boil the potatoes until tender, then drain and leave to cool. Heat the oil in a large non-stick frying pan and fry the potatoes, turning over until golden and crisp. Add the chorizo and chilli, and fry for another 3-4 mins until the chorizo is crisp. Season, then stir through the parsley.
2 Serve the potatoes topped with the poached eggs.
