CHICKEN CONGEE (CHINA) 250g jasmine rice, washed lightly in could running water 2.2 litres water 3 chicken thighs, with skin and bone 4 thick slices of ginger, crushed with a large knife 2–3 teaspoons salt flakes 1 small handful coriander (cilantro) leaves 1 spring onion (scallion) stalk, finely sliced 50g roasted peanuts, roughly chopped Add the rice, water, chicken thighs, ginger and 2 teaspoons of salt to a slow cooker. Stir briefly and set the slow cooker to low temperature. Leave the cooker on overnight or for 10 hours. When ready to eat, remove the chicken from the congee and strip the meat from the bones, adding the meat back into the congee and discarding the bones and skin. LOCAL TALENT The staging of the annual Education Week at the Hawkesbury, known as ‘School Showcase’, was a great success. The event was attended by large crowds that enjoyed outstanding school performances at Hawkesbury Central Library.
