More and more we are looking for trips that are life-enriching. Yes, a week on a sandy beach in the sunshine is hard to beat, but as the weather cools, we like to seek out experience breaks, where we might learn a new skill and immerse ourselves in something outside of our normal life. When I was four years old, my family relocated to the east coast of Malaysia, and palm-fringed, white-sand beaches became an everyday occurrence for me, as well as encounters with giant turtles, majestic stingrays and neon jelly fish. I returned to the UK to start secondary school and the following three decades saw me build a life inland. Last year, keen for a change of scene, my husband, three children and I escaped the hustle and bustle of the London commuter zone and relocated to the quieter, more down-to-earth Kent coast where Sandwich Bay became our playground. Overlooking a beach in Sussex, The Dodo is a relic of a local railway line that was taken out of service in the 1930s. At the time, an unidentified builder decided to locate a couple of defunct train carriages at right angles to the sea, parallel to each other, and insert a roof over the top of them. Further along the beach are similar houses made in the same way, though it is often difficult to tell from the outside what their origins were. ‘One of them is a traditional wooden structure that could very easily be mistaken for a clapboard cottage in Cape Cod,’ remarks owner Kate Barton. Grilled Mackerel with Rhubarb Sauce • 6 fresh mackerel, weighing about 225g each, gutted and cleaned• 1 lemon, cut into 12 half slices• 15g butter, melted• 1 tbsp chopped fresh parsley For the sauce:• 9 tbsp Bonne Maman Rhubarb Compote• One and a half unwaxed lemons, zest and juice• 3 tbsp white wine vinegar• 1cm piece of ginger, peeled and sliced• Salt and ground white pepper Method (SERVES 6) 1. An extremely rare sea slug was spotted off the coast of the Isles of Scilly last summer – the first confirmed record of the species in the UK, according to Cornwall Wildlife Trust. The rainbow-coloured nudibranch, Babakina anadoni, which measures just two centimetres in length, was captured on camera (right) by Seasearch volunteer Allen Murray during a dive near Melledgan, an uninhabited rock island in the Scilly Isles. The sun is patterning the gently rippling sea with sparks of light as we clamber into the dinghy, eyed curiously by a huge seal on a nearby rock. The sea in the sheltered bay is calm, the sky blue and cloudless, and the small, deserted island ahead is inviting. I trail my hand in the cold water as we make the short trip to the shore and hop across rocks and pools onto the land. Wildflowers pepper the grass where a narrow path snakes towards the hillside. Heart pounding with anticipation, I climb higher, glancing towards the birds as they swirl above the sea. I reach the top of the ledge and gasp at the beauty that unfolds before me. One of the things I enjoy most is to walk down to the beach near our house and cook with my wife Alice. I love it, and try to do it whenever I can. We live along an incredibly beautiful stretch of coastline, but because it’s difficult to get to, it tends to be very quiet, even during the warmer summer months. Occasionally, we are the only ones there. If we are alone, I like to turn and stare up at the wooded cliffs that sweep away to a western headland and imagine I’ve travelled back in time. It makes me very happy to cook fresh scallops over a fire. They’re so sweet, and such a joy to eat in the open air. Sometimes I’ll thread them onto rosemary sticks with hunks of spicy chorizo sausage and grill them like kebabs. Sometimes I sizzle them in their own shells with thin slivers of garlic and salty butter. The only other thing they need is a squeeze of lemon at the end. In this recipe the scallops get seared over embers with thyme and salt and pepper, then served in their shells with silky creamed leeks cooked in some fruity cider. If I’m feeling decadent, I’ll finish the scallops and leeks with a little trickle of good truffle oil, which takes them to a whole new place. It’s not…

I feel very lucky to have grown up where I did on the North Cornish coast (pictured). It was a lovely time, an innocent time. We had one of the greatest assets you can have, living next to the ocean and leading a rural life, it was energising. My brother still runs the family farm at Kilkhampton, two miles north of Bude, and sends me films of cows, calves, sheep and views of the sea.
