There is something about the early-morning call along the coast of Alderney – the northernmost of the inhabited Channel Islands and part of the Bailiwick of Guernsey. Our much-loved beavers have made a comeback in the wilds of Purbeck, Dorset, after the landmark licensed release of two pairs of Eurasian beavers. They will roam free in an area peppered with water courses and lakes, unrestricted by fenced enclosures. As a Cornish chef, I’ve always been connected to the sea, and the wildness of the coast is reflected in my cooking. My trip to Shetland, in the most northerly part of the British Isles – where I met with fishermen and food producers – has not only reinforced this love of the ocean but also inspired me in my culinary life. My week-long journey to the Islands revealed the extraordinary food and produce here, along with the incredible heart and traditions of this vibrant island community. PRIEST’S COVE TIDAL POOL CAPE CORNWALL, CORNWALL Cape Cornwall is a rugged, wild place where you feel very aware of the power of the Atlantic Ocean, which dominates the view. The open sea here is beautiful but not a place for snorkelling – this headland is where the Atlantic currents divide into the Bristol Channel and Irish Sea to the north, and the English Channel to the south. Fortunately, tucked away in Priest’s Cove is the Children’s Pool, which was blasted out of the rock to provide a safe place for the children of local miners to take a dip.
