Sausage and Sweet Potato Skillet Hash
Makes 4 to 6 servings
3 large sweet potatoes, peeled and cubed 2¾ teaspoons kosher salt, divided 4 tablespoons unsalted butter, divided 1 (14-ounce) package smoked kielbasa sausage, halved lengthwise and cut crosswise into 3-inch pieces 1 small red onion, cut into ½-inch pieces 1 large yellow bell pepper, seeded and cut into ½-inch pieces 1 cup fresh mushrooms, quartered 3 cloves garlic, minced ½ teaspoon ground black pepper Garnish: chopped green onion 1.
