Feta Spinach Rolls

3 cups fresh spinach2 cups fresh arugula1 (4-ounce) package creamy feta cheese1 (4-ounce) container crumbled feta cheese1¼ cups ricotta cheese½ teaspoon kosher salt, plus more to taste½ teaspoon minced garlic½ teaspoon ground black pepper, plus more to taste1 large egg1 tablespoon water1 (17.3-ounce) package frozen puff pastry (2 sheets), thawed
1. Preheat oven to 350°. Line 2 rimmed baking sheets with parchment paper.
2. In a medium skillet, cook spinach and arugula over medium heat, stirring occasionally, until wilted, about 5 minutes.
3. In a large bowl, combine all cheeses, salt, garlic, and pepper. Add spinach mixture, stirring until combined.
4. In a small bowl, whisk together egg and 1 tablespoon water.
