Free-Range Revelry PAGE 25 Grilled Sea Scallops with Parsley-Shallot-Honey Sauce WORKING TIME 25 minutes TOTAL TIME 30 minutes (including standing) MAKES 4 to 6 servings Canola oil, for grill grates 1 tablespoon chopped shallot1 lemon, peeled and chopped, plus 2 teaspoons juice1 teaspoon pure honey Kosher salt and freshly ground black pepper¼ cup chopped fresh flat-leaf parsley2 teaspoons chopped fresh thyme¼ cup plus 1 tablespoon olive oil, divided16 large sea scallops, muscle discarded 1. OBJECT LESSON: McKee’s Citrus Reamers WHAT TO KNOW: The three McKee brothers (Samuel, Thomas, and James), founded their Pittsburgh glass plant in 1836, with production focused mainly on window glass and hollow ware. After their relocation to Jeannette, Pennsylvania, in 1888, they began making more high-fashion glassware like pressed-pattern glass and opaqueware (such as these smaller reamers) and even their own version of Pyrex called Glasbake. In 1926, McKee Glass Co. replaced Sunset Glass Works as the exclusive maker of the popular Sunkist-branded citrus reamers that the fruit company offered as a premium to their buyers. Cartons Thanks to turn-of-the-century technology, America’s ice cream obsession was no longer limited to parlors and soda shops. Mass-produced ice cream, chilled in bricklike rectangular molds and then wrapped in wax-coated cartons, soon found its way into stores and households in the early 1900s (specifically the 1920s and ’30s). Most cartons can now be scored for less than $15 apiece, but brands with pedigree, like Borden’s (at bottom) and Holbrook’s Polar Brand (near top), command more. Makers First patented in 1843 by Nancy M. Johnson, the hand-crank ice-cream maker rose in popularity in the late 19th century.
