Sausage-Stuffed Squash

2 tablespoons olive oil, plus more for brushing squash½ large sweet onion, choppedKosher salt and freshly ground black pepper½ pound loose sweet Italian sausage½ cup cooked white rice¼ cup fresh flat-leaf parsley, chopped, plus more for garnish4 ounces sharp Cheddar cheese, grated (about 1 cup), divided4 large yellow squash, halved lengthwise and seeds scooped out
1. Preheat oven to 400°F. Heat oil in a medium skillet over medium heat. Add onion and season with salt and pepper. Cook, stirring occasionally, until tender, 4 to 6 minutes. Add sausage and cook, breaking it up with a wooden spoon, until no longer pink, 8 to 10 minutes. Transfer to a bowl; stir in rice, parsley, and ½ cup cheese.
