Good roast potatoes deserve to be the main event, so I’ve teamed these epic, roasties with simple eggs and prosciutto.
4 large (about 300g) sebago potatoes, peeled
30g unsalted butter
1 garlic bulb, cloves separated
1 tbs extra virgin olive oil, plus extra to drizzle
1/2 bunch rosemary, leaves picked
4 eggs Thinly sliced prosciutto and rocket leaves, to serve
