SUMMER MAY ALMOST BE over for another year, and with it the bounty of glorious summer fruits. But before autumn arrives, there’s one last chance to enjoy juicy, flavourful mango, pineapple, passionfruit, paw paw and more, with these South American-style desserts from Mariana Chaves, the Brazilian-born head pastry chef at Jamie’s Fifteen restaurant in London.
“I especially loved the banana cake with coconut,” she says. “The flavours transported me back to my childhood.”
As for Jamie, he’s recently been inspired by the fiery passion, exotic ingredients and intense flavours of South American cooking – none more so than Brazil.
“For me, Brazilian culture has so much to offer,” he says. “It’s creative, colourful and expressive, and this radiates through their wonderful food.”
