Scamorza is a Southern Italian cheese belonging to the pasta filata family, which translates as ‘spun paste’. These cheeses are aptly named because they undergo a stretching process that gives them a characteristically springy and very pokable squidgy quality. We challenge you to resist a little prod with your finger. We like to think of scamorza as mozzarella’s edgier, more bitey older sibling.
