Christmas starts a little early here at delicious. It’s about halfway through July, in fact, that we all sit down and summon the festive spirit to plan our biggest issue of the year. (Giving Mariah an early play is almost always floated.) Getting it right is so important for us, because there’s almost no other event in which food is so deeply interwoven as Christmas. Chef and restaurateur Luke Nguyen is no exception. “I cook predominantly only seafood when I’m doing Christmas in Australia,” he says. “Because we’re so lucky here – our seafood is among the best in the world, and I’ve travelled to a lot of other countries.
