CHRISTMAS TREE DEVILED EGGS 1. Bring a large pot of water (about 6 cups) to a boil over high heat. Using tongs or a slotted spoon, gently lower 8 large eggs into water and stir to create a vortex. (This will help keep the yolks centered.) Cook for 9 minutes. 2. Meanwhile, fill a large bowl with about 2 cups ice and about 3 cups water. As soon as eggs are done cooking, transfer to ice bath. PIMENTO CHEESE FRIED OLIVES 1. Using a skewer, push pimentos out of 20 to 22 pimento-stuffed olives; reserve pimentos for mayonnaise. 2. In a food processor, pulse ⅓ cup pimento cheese until smooth. Transfer to a piping bag fitted with a small round tip. Pipe cheese into each olive. 3. Into a large, heavy pot, pour vegetable oil to a depth of 2". Cut 1 (6-oz.) block Gruyère into right triangles 2½" to 3" in length. Cut triangles into 24 (¼"-thick) slices. In sets of 4, shingle on board as shown. 3. Lay 1 salami slice (from 8 oz. sliced salami) on a work surface; overlap slice halfway with a second slice. Repeat layering, using 3 slices for small roses, 5 for medium, and 7 for large. In a small microwave-safe bowl, microwave ½ cup (85 g.) semisweet chocolate chips in 10-second increments, stirring between each, until melted and smooth, about 30 seconds total. 2. SUGAR COOKIE CHEESECAKE CUPS 1. Arrange a rack in center of oven; preheat to 350°. Grease a mini 24-cup muffin tin with cooking spray. 2. Divide 1 (16-oz.) pkg. refrigerated sugar cookie dough into 24 pieces, about 2 Tbsp. (19 g.) each. Into a small bowl, pour ¼ cup red and green sprinkles. Working one at a time, press dough into sprinkles to coat, then roll into a ball. Place 1 ball in each prepared muffin cup, pressing dough into bottom and up sides of cups. 3. MELTING SNOWMAN MIMOSA 1. Using a vegetable peeler, remove a wide strip of orange peel from 1 small orange, avoiding the white pith.
