STEVE ALLEN AND CARMINE LA-FARCIOLA of Pollen whipped up a Mediterranean-style brunch, taking their cues from Spain, France and Italy. Allen spent 10 years sharpening his knives at the now-shuttered Gordon Ramsay at Claridge’s. The East Sussex native was the chief executive officer of The Delicious Group in Kuala Lumpur and group executive chef of E&O Berhad before becoming the head chef at Pollen. La-Farciola, his sous chef, is Italian but was born in Kirchheim unter Teck in Germany. Before joining Pollen, he honed his skills in Belmond Villa San Michele, Hotel Ritz, Madrid, and Four Seasons Hotel Prague.
