Picture this: a self-sustaining farm in our Little Red Dot that supplies fresh produce to 40 (and counting) restaurants, which include Chef’s Table by Chef Stephan Zoisl, 1-Altitude, one Michelin-starred Alma, and two Michelin-starred Restaurant André. Welcome to Citizen Farm. The brainchild of Bjorn Low, founder of Edible Garden City, the 8,000 sq m urban farm is driven by its own ecosystem. Think: insect farming that transforms food waste into fertiliser, which is used as food for tomatoes and vegetables; then passing the waste generated from the produce back to the insects.
