FISHCAKES
Can-do!
This recipe is so easy and can be made with any canned fish. Drain the fish well beforehand, otherwise the fishcakes won’t bind properly and will break when you cook them.
Ingredients (makes about 10)
half a stale white bread, grated 2 tablespoons butter 2 onions, finely chopped one large handful parsley, finely chopped 1 teaspoon masala chilli powder 2 eggs 3 cans (410 g each) fish – use tuna, sardines, salmon or a mix salt, pepper and lemon juice, to taste 2 tablespoons baking powder 2 cups mashed potatoes 2 cups cooking oil Here’s how 1 Mix the breadcrumbs, butter, onion, parsley, masala and eggs together in a bowl – using your hands will work best.
