BEET SLAW
In large bowl, toss ½ small red onion (thinly sliced), 2 Tbsp fresh orange juice and ¼ tsp kosher salt. Let sit 5 min. Whisk in 2 Tbsp olive oil, 1½ tsp distilled white vinegar and 1 tsp whole-grain mustard. In food processor fitted with large grating disk, grate 1 large red beet (peeled and halved) and 2 carrots (peeled). Toss with onion, ¼ cup cilantro leaves and ½ tsp salt.
