Can you tell us a bit about yourself? I studied hotel and restaurant management in Montreal, so my background is in hospitality but on the events side. Events often need flowers, and I had always wanted to be involved in that world. What was the brief for this project? This is the home of Hassan Abdullah and Michel Lasserre, two of Les Trois Garçons – former restaurateurs who now focus on interior design, furniture and antiques. Their signature style is famously flamboyant and fun. They asked me to create a crisp white kitchen that could handle a lavish décor. How did you formulate the layout? The vast space covers the entire lower ground floor, opening on to a patio and garden studio beyond. Besides two rather obnoxious structural pillars, it was a blank canvas. I devised a long sink run, with tall cabinets at either end to conceal the pillars. Can you describe the project? The property is a Grade II-listed Georgian terraced townhouse in north London and this space was originally the first-floor drawing room and office/play room. The brief was to fashion the entire floor into a sizeable main bedroom and adjoining, but not enclosed, en suite. The clients asked us to push them beyond their comfort zone by coming up with something braver and more exciting than what they might have conceived. Did you face any challenges? We were very restricted by listed building constraints. Adam and Sara Aamann-Christensen were quite ready for a refurbishment project when they bought their new home, a large property situated in an old maritime area close to the centre of Copenhagen, five years ago. The structural integrity of the 19th-century property was compromised and required an extensive renovation, which Adam, a chef, restaurateur and culinary writer, set about with characteristic aplomb. Can you tell us how these latest designs came about? Co-founders Annabel Astor, Sue Jones and myself each took on a project to design our own cushions for spring. I wanted to create an eclectic, colourful collection that would be suitable for every room in the house. What influenced your colour palette and patterns? What made you decide to open a shop? My mum, Helene, who is my business partner, had a shop for about 10 years, which was one of the first to pioneer items such as brushes, brooms and string. That closed a couple of years ago, then the space she was renting to another business became empty, so we decided to launch a pop-up. After years spent honing self-taught baking skills, Chris and Joanna Brennan founded Pump Street Bakery in Orford, Suffolk, in 2010. From a historic 15th-century building on Market Square, the pair make award-winning sourdough breads, cakes, buns and chocolate using local ingredients, inspired by craft production techniques. These herb-printed eggs make pretty seasonal place markers for the table. Simply position herb leaves, such as parsley, dill or mint, on the surface of a white egg, then wrap tightly in muslin and secure with string. Jeanne Kortbeek knew little of the historic region of Burgundy, in the heart of France, until her sister moved there. What the Dutch book editor saw when she first visited the area so bowled her over, however, that she and her husband soon decided to move there, too. The Kortbeeks began their search for a new home deep in the unspoilt countryside and, as a keen gardener, Jeanne hoped to find a property with a garden that she could open to the public. ‘The third place we viewed was an amazing medieval house with lots of land,’ Jeanne says. ‘As soon as we saw it, it was as if we had been struck by lightning. Can you describe the project? This is the informal dining space adjoining the kitchen of a Grade II-listed Gloucestershire manor house. Parts of the building, including this room, date to the Elizabethan era, but various additions have been made over the years, so there is a rather wonderful higgledy-piggledy feel to the place. My challenge was to find a thread to link the different styles to ensure a sense of a connection from one room to the next. What made this scheme particularly challenging? • Whichever room you’re decorating, it’s worth making a fuss of the floor. In a sitting room, we recommend a statement rug. Not only will it ground the room but it can serve as the starting point from which to build the scheme. It’s a worthwhile investment, and you can take it with you if you move. • Recently, we’ve done some really nice bathroom floors using different marbles in a chequerboard pattern, or a central stone with a contrasting border. APPLE & ELDERFLOWER MARTINI Serves 6 This fresh floral cocktail can be made ahead and kept chilled until guests arrive. 300ml vodka 300ml pressed apple juice, chilled 5 tbsp elderflower cordial 3 limes Crushed ice 1 granny smith apple, thinly sliced into rounds Mint sprigs, to garnish Combine the vodka, apple juice and elderflower cordial in a large jug. Consider the size and shape of your living room – measure each wall accurately and calculate how much space a sofa will take up. Intended use is an important factor, too.
