Flavor of the Month Instead of slapping a pat of butter on the side of the bread plate, several chefs are now churning their own, with the help of fermenting agents (usually in the form of buttermilk or yogurt) to make a deeply rich and complex spread. At Provision, chef Layton Roberts makes a straightforward butter with white wine, fines herbes, salt, and steak-seasoning rub. TIME STAMP 1984 THERE WAS A TIME when skaters came from all over the city to glide on Monument Circle, whether they were doing double axels or just wobbling along bravely on weak ankles. Onlookers poured out of coffee shops and restaurants to watch them. It was magical. No wonder—the first official skating rink on the Circle was the work of a real-life magician. ABOUT THIS time of year, I grow weary of winter and wish it were spring. If I were into gardening, I could look through the seed catalogs and transport myself to April, when Doc Leondis, who lives up the road, rototills his patch of land.
