Poke (pronounced po-KAY), a dish consisting of diced and seasoned raw yellowfin tuna, has been a pillar of Hawaiian culinary culture for decades and is in the midst of a mad romance with chefs all over the country. NIKKI HART commutes two hours to work every day. First, the IndyGo rider takes her son to daycare, then waits 30 minutes for another bus to carry her to a different route, where she finally can board a bus that takes her to her job at Recycle-Force on the east side.
