Zucchini, or courgette as it is known in other countries, is easy to grow and can thrive in various climate conditions. This versatile vegetable has its season from summer through to autumn and has many different culinary uses, in salads, quiches or frittatas (such as zucchini slice), casseroles and bakes, and in pasta dishes, or even in place of pasta, spiralised into ‘zoodles’. The zucchini plant also produces edible flowers, which are often stuffed with cheese, battered and then deep fried. Zucchini can grow very large, so smaller ones will be younger and have a sweeter flavour. Select zucchini that have firm, glossy, unblemished skin and store them in the crisper section of your fridge wrapped in absorbent kitchen paper, where they will keep for up to four days.
