Creamy Pork, Mushroom and Spinach Penne
Serves 4, Prep 10 mins, Cook 10 mins
375g penne pasta
50g butter, chopped
2 tblsps olive oil
200g button mushrooms, thinly sliced
1 medium onion, finely chopped
2 cloves garlic, crushed
250g sliced roast pork, torn into small pieces
300ml tub light cooking cream
120g baby spinach leaves
Salt and pepper, to taste
Grated parmesan, to serve
1 Cook pasta in a stockpot of boiling, salted water until tender. Drain, reserving ½ cup of the cooking water. Cover pasta to keep warm.
2 Meanwhile, heat butter and oil in a large, deep, non-stick frying pan over a medium to high heat. Add mushrooms, onion and garlic. Cook, stirring occasionally, for about 7 minutes, or until mushrooms are tender.
