Korean Beef Lettuce Cups
Serves 4, Prep 10 mins, Cook 15 mins
1 tblsp vegetable oil
5 green spring onions, thinly sliced
1 large carrot, peeled, finely chopped
2 cloves garlic, crushed
2 tsps finely grated fresh ginger
500g beef mince
¼ cup soy sauce 2 tblsps brown sugar
1 tblsp mirin
2 tsps sesame oil
2 tblsps sesame seeds, toasted Iceberg lettuce leaves, to serve
Extra sliced green spring onions, to garnish
1 Heat oil in a large, non-stick frying pan over a medium heat. Add onions, carrot, garlic and ginger. Cook, stirring occasionally, for about 5 minutes, or until carrot is soft. Add beef. Increase heat to high.
