Apricot Shortbread Crumble Serves 6, Prep 5 mins, Cook 15 mins 2 x 825g cans apricot halves in juice 2 tblsps golden syrup Vanilla ice-cream, to serve CRUMBLE 250g packet Scotch Finger biscuits 125g unsalted butter, melted ½ cup brown sugar, firmly packed 1/3 cup quick oats 1/3 cup desiccated coconut 1 tsp ground ginger 1 Drain apricots, reserving ¹/ ³ cup of the juice. 2 Place apricots in a large, shallow, ovenproof dish (10-cup capacity). Pour over reserved juice. Drizzle with golden syrup. 3 To make crumble, place biscuits in a medium snap-lock bag. Seal. Using a rolling pin, gently pound until coarsely crushed. 4 Transfer to a large bowl. Add butter, sugar, oats, coconut and ginger. Mix well. 5 Sprinkle crumble over apricots in the dish. 6 Cook…

MONDAY Chicken Florentine with Pesto Potatoes Serves 4, Prep 15 mins, Cook 18 mins 4 x 250g chicken breast fillets, trimmed Salt and pepper, to taste 2 tblsps olive oil 200g baby spinach leaves 2 cloves garlic, crushed 1 cup grated pizza cheese 250g punnet cherry tomatoes 750g baby white potatoes, halved 2 tblsps basil pesto 1 Season chicken with salt and pepper. 2 Heat oil in a large, nonstick frying pan over a medium to high heat. Add chicken. Cook, for about 3 minutes on each side, or until chicken is browned. Transfer to an oiled, large oven tray. 3 Return frying pan to a medium heat. Add the spinach and garlic.
