Curried Chickpea and Lentil Patties
Serves 4, Prep and Cook: 35 mins
1 cup frozen peas 400g can chickpeas, rinsed, drained 420g can brown lentils, rinsed, drained ²/³ cup packaged dried breadcrumbs 1 egg, lightly beaten 3 tsps mild curry powder ¼ cup chopped fresh parsley 3 green spring onions, finely chopped ¼ cup vegetable oil Mango chutney, Greek yoghurt, mixed salad leaves and tomato wedges, to serve 1 Cook peas in a saucepan of boiling, salted water for about 3 minutes, or until tender. Drain. Transfer to a large bowl. Add chickpeas. Coarsely mash.
2 Add lentils, breadcrumbs, egg, curry powder, parsley and onions. Season with salt and pepper. Using clean hands, mix well.
3 Divide mixture into eight equal portions. Using damp hands, shape into patties.
