Double-Choc Caramello Custard Trifle Serves 14, Prep: 40 mins 315g packaged iced chocolate madeira cake 600ml tub thickened cream 2 tsps vanilla extract Halved Caramello Easter eggs, vanilla wafer rolls and caramel-flavoured syrup, to serve CHOCOLATE CUSTARD 900g tub rich chocolate double thick custard 1½ cups Dark Choc Melts 300ml tub thickened cream 1 To make chocolate custard, combine custard and chocolate in a large saucepan. Creamy Fish and Chip Pie Serves 6, Prep and Cook: 1 hour 500g jar four cheese lasagne sauce ½ cup sour cream 1 cup finely grated parmesan (60g) ¹/ ³ cup thinly sliced fresh chives 1 tblsp Dijon mustard 1 tblsp lemon juice 2 cloves garlic, crushed 1kg boneless, skinless, thick white fish fillets, cut into 4cm pieces 2 tblsps plain flour TOPPING 1kg bag frozen French fries ¾ cup finely grated parmesan 1 Combine sauce, cream, parmesan, chives, mustard, juice and garlic in a large jug. 4-Ingredient Crepes with Pineapple and Coconut Sauce Serves 4, Prep and Cook: 20 mins 2 cups finely chopped fresh pineapple (300g) 1 cup brown sugar, firmly packed 270ml can coconut milk 400g box frozen French-Style crepes 1 Place pineapple and sugar in a large frying pan. Cook, stirring over a medium heat until sugar is dissolved. Bring to boil. Add coconut milk. Gently boil, stirring occasionally, for about 15 minutes, or until slightly thickened.
