This issue celebrates these long-running, always-glamorous and often hilarious shows – which, unlike so many others, have stood the test of time. Butterflied Lamb with Medley Tomatoes and Rocket Serves 4, Prep and Cook: 45 mins 1.2kg butterflied leg of lamb 2 tsps fennel seeds 1 bunch rocket, trimmed, torn MEDLEY TOMATOES 320g punnet mixed medley tomatoes, halved (see tip) ½ small red onion, finely sliced ¼ cup lemon juice 1 tblsp olive oil 1 clove garlic, crushed 2 tblsps drained baby capers 1 To make medley tomatoes, place tomatoes and onion in a glass dish. Watermelon, Feta and Pistachio Salad Serves 8, Prep: 20 mins 2.5kg piece seedless watermelon (about ¼ watermelon) ¼ cup finely chopped pistachio kernels 2 tblsps sunflower seeds, finely chopped 1 tsp ground coriander 1 large lime 100g firm feta, crumbled Lime wedges, to serve 1 Cut watermelon crossways into 3cm thick slices. Remove and discard rind. Cut slices into 3cm cubes. 2 Combine pistachios, sunflower seeds and coriander in a small bowl. 3 Finely grate 2 tsps of rind from lime. Cherry Chocolate Biscuit Wreath Serves 26, Prep: 15 mins 2/3 cup chocolate-hazelnut spread 100g cream cheese, chopped, at room temperature 2 tblsps icing sugar mixture 26 Butternut Snap Cookie 750g fresh cherries, pitted Extra icing sugar mixture and ribbon bow, to decorate (optional) 1 Beat the chocolate-hazelnut spread, cream cheese and icing sugar in a small bowl of an electric mixer until smooth. Spread 2 tsps of the mixture over each cookie. 2 Arrange 15 cookies side-by-side in a 32cm circle on a large serving plate. I wish to commend you on your tribute to Sir Sean Connery – the original James Bond, who passed away after a long battle with dementia. Merry Berry Christmas Bombe Serves 8, Prep: 35 mins 465g bought dark fruitcake, broken into pieces 1.5 litres vanilla ice-cream ¾ cup Vienna almonds, chopped 250g punnet strawberries, hulled, halved 125g punnet raspberries 125g punnet blackberries 150g White Choc Melts, melted Extra Vienna almonds, to decorate 1 Grease a metal pudding steamer (8-cup capacity).
