Chicken Pho

1 litre (4 cups) chicken stock 1 large onion, halved, thinly sliced 8cm piece ginger (80g), peeled, thinly sliced 2 tblsps coriander seeds 2 tsps whole black peppercorns 4 whole cloves 4 star anise ¹/ ³ cup fish sauce 1 tblsp brown sugar 1.2kg chicken thigh fillets, trimmed 375g pkt dried rice noodles Bean sprouts, Vietnamese mint leaves, sliced red chilli and lime wedges, to serve 1 Combine stock, onion, ginger, spices, fish sauce, sugar and 2 litres (8 cups) of water in the removable bowl of a 5- to 6-litre capacity slow cooker.
