Beef Chilli Con Carne
Serves 6-8, Prep and Cook 7 hours, 30 mins
2kg beef chuck steak, trimmed, cut into 3cm pieces 2 large onions, coarsely chopped 35g sachet chilli seasoning 3 tsps ground coriander ¹/ ³ cup tomato paste 2 x 400g cans red kidney beans, drained, rinsed 400g can crushed tomatoes 1 cup fresh coriander leaves, plus extra to garnish Steamed rice, sour cream, smashed avocado and tortilla strips, to serve 1 Place beef, onions, seasoning, ground coriander, paste, kidney beans and tomatoes in a removable bowl of a 5- to 6-litre slow cooker. Stir to combine. Cover with cooker lid.
2 Cook on LOW for about 7 hours, or until beef is tender. Stir in coriander.
3 Serve with steamed rice, sour cream, smashed avocado and tortilla…
