Chorizo and Beans on Toast
Serves 4-6, Prep and Cook 40 mins
2 chorizo, finely chopped 1 small onion, finely chopped 2 cloves garlic, crushed 1 tsp smoked paprika 2 x 400g cans cannellini beans, rinsed, drained 400g can crushed tomatoes 1 tblsp Worcestershire sauce Tabasco sauce, to taste Chargrilled sourdough bread, finely grated parmesan and extra virgin olive oil, to serve 1 Heat an oiled, large frying pan over a medium heat. Add chorizo, onion and garlic. Cook, stirring occasionally, for about 4 minutes, or until onion is soft and chorizo is crisp. Add paprika. Cook, stirring, for 1 minute.
2 Stir in beans, tomatoes, Worcestershire sauce and 1/2 cup water. Bring to boil. Simmer uncovered, stirring occasionally, for 20 minutes, or until slightly thickened. Season with Tabasco.
