Plum Pork Chops with Ginger Fried Rice SERVES 4 PREP & COOK 20 MINS ■ 450g packet family-size microwave long grain white rice ■ 4 x 200g pork loin chops, rind removed ■ ¹⁄³ cup plum sauce ■ 1 red capsicum, finely chopped ■ 125g punnet baby corn spears, thickly sliced ■ 4 green spring onions, chopped ■ 1 bunch baby bok choy, thickly sliced, stems and leaves separated ■ 1½ tsps finely grated ginger ■ 2 tblsps light soy sauce 1 Heat rice according to packet directions.
