1 tablespoon olive oil
2 teaspoons sea salt flakes

2 tablespoons olive oil
1 medium onion, chopped finely
2 garlic cloves, crushed
¼ cup (35g) pistachios, chopped coarsely
1 cup (70g) fresh breadcrumbs (see tip)
1 egg, beaten lightly
⅓ cup (55g) dried apricots, finely chopped
75g drained feta, crumbled
¼ cup fresh flat-leaf parsley, finely chopped
