Pork belly skewers with Vietnamese caramel sauce

900g pre-cooked pork belly (supermarkets sell this in the ready-meal section)6 tbsp dark soy sauce4 tbsp fish sauce1 tbsp ginger, grated2 limes, juiced175g soft brown sugar1 red chilli, seeded and finely chopped1 cucumber 1 Remove the pork belly from any packaging. Cut into bite-sized squares.
