PICKLED BERRIES
MAKES 1 cup
TOTAL TIME: 10 minutes
Place 1 cup mixed berries (cranberries, blueberries, and blackberries all work well) in heatproof bowl and set aside. In saucepan over medium heat, combine 1/2 cup apple cider vinegar, 1/4 cup organic cane sugar, 1 cinnamon stick, 1 Tbsp honey, 1/2 tsp whole cloves, and 1/2 tsp salt and bring to a boil. Cook until sugar is completely dissolved, 3 to 5 minutes. Remove cinnamon and cloves. Allow brine to cool slightly, then pour over berries. Allow mixture to cool completely before serving. Store in airtight container in refrigerator up to 3 months.
