Steak, Peach & Arugula Salad

PREP TIME: 10 minutes
TOTAL TIME: 30 minutes
1¼ lb flank steak
½ tsp kosher salt
½ tsp black pepper
2 ears corn, shucked
2 lg peaches, pitted and cut into 1" wedges
1 lg red onion, sliced ½" thick
¼ c olive oil
3 Tbsp lemon juice
1 Tbsp fresh thyme
2 tsp Dijon mustard
1 pt cherry tomatoes, halved
4 c arugula
Coat grill or grill pan with cooking spray and heat to medium-high. Season steak with salt and pepper. Cook steak, flipping once, 12 minutes for medium.
