Vary the types (and colors) of peppers to give your’za more layers of flavor. Spicier peppers, like jalapeños, offer a contrast to the creaminess of the cheese.
HOT-PEPPER AND ONION PIZZA
IN A BOWL, TOSS:
1 small onion, thinly sliced1 small red pepper, sliced1 small yellow pepper, sliced1 poblano pepper, halved and thinly sliced1 small jalapeño, halved and, thinly sliced1 Tbsp olive oil¼ tsp each salt and pepper
Follow instructions on page 85, but sprinkle 1½ oz extra-sharp Cheddar (coarsely grated) over dough before adding topping mixture.
