MAKE THE JAM
In small saucepan, combine pomegranate juice, chia seeds, and honey and bring to a boil. Reduce heat to medium-low and cook, stirring occasionally, 3 min. Remove from heat, let cool 10 min., then refrigerate until set, about 2 hr.
BUILD THE PARFAIT
Working with four 6- to 8-oz jars, cups, or glasses, evenly layer yogurt, chia jam, berries, and pomegranate seeds. (Can be refrigerated up to 3 days.) Top with almonds just before serving.
