Bacon-Cheddar Angel Biscuits

⅓ cup warm water (105° to 110°)2 teaspoons active dry yeast2½ cups all-purpose flour3 tablespoons sugar1 teaspoon baking powder1 teaspoon kosher salt½ cup all-vegetable shortening1 cup shredded sharp Cheddar cheese, divided¾ cup cooked crumbled bacon, divided⅓ cup whole buttermilk2 tablespoons chopped fresh chives1 large egg, beaten
