CHICKEN MULLIGATAWNY SOUP SERVES 4-6PREP & COOK 1 HOUR 1 large onion, finely chopped 2 large carrots, finely chopped 2 celery sticks, finely chopped 4cm piece fresh ginger, peeled, finely grated 1½ tbsp curry powder 700g chicken thigh fillets, trimmed 1 litre chicken stock 400ml can coconut milk 2 red apples ½ cup basmati rice, rinsed 2 tbsp lemon juice 1 cup chopped fresh coriander 1 Heat a lightly oiled stockpot over a medium heat. ANIMAL HAVEN What started as a science project for Jessica Walker led to her creating an animal sanctuary at just 13. The school assignment on factory farming and the effects on animals, ignited Jessica’s passion for saving animals, and in 2019 her ‘micro sanctuary’ was founded on the belief that farm animals are ‘someone, not something’. Piglets George and Lucy were the first two animals Jessica saved. Now, The Little Red Barn Micro Sanctuary has rescued over 10,000 horses, cows, pigs and goats – many of them were destined for the slaughterhouse. STICKY PECAN PIE PUDDING SERVES 8 PREP & COOK 2 HOURS Melted butter, for greasing 1 cup whole pecans (120g), toasted 125g butter, chopped ½ cup firmly packed brown sugar ¼ cup golden syrup ½ tsp bicarb of soda 2 eggs, lightly beaten 1⅔ cups self-raising flour ½ cup Greek-style yoghurt Vanilla ice-cream, to serve SAUCE  1 cup golden syrup  50g butter, chopped 2 tbsp cornflour 1 Grease a metal pudding steamer (8-cup capacity) with melted butter. Ai-Da used cameras in her eyes, AI algorithms, and a robotic arm to create the oil painting, unveiled at the United Nations’ AI for Good Summit in Geneva. BANANA HONEY PIKELETS MAKES 20 PREP & COOK 30 MINS 1 small banana (125g), mashed 1 cup buttermilk 1 egg, lightly beaten 2 tbsp honey, plus extra to serve 1¼ cups self-raising flour Melted butter, for greasing 1 Combine banana, buttermilk, egg and honey in a medium jug. 2 Place flour into a large bowl.
